Chef Nobuo Fukuda is a free-spirited chef born of a strict culture. With a desire to bridge the gap between Japan and the rest of the world, (known as kakehashi), Nobuo left Japan and his family behind and emigrated to the United States. Facing many challenges – Nobuo started as a dishwasher at Benihana – the James Beard Award-winning chef did the unexpected: he created a cuisine that bridges the gap.
